Hupao Spring is ranked the third purest spring in China, according to scientific research on the quality of the water in Leng Spring in Zhejiang Province and Hui Spring in Wuxi City of Jiangsu Province. Much pleasure can be gained from Hupao Spring listening to the water, viewing the spring, tasting the spring, feeling the spring, and even dreaming about the spring can be enjoyable.

Hupao Spring is well famed for its unique fountain. People of all ages praise it highly after tasting a cup of Longjing tea made from water from Hupao fountain. In both ancient and modern times, many poems admiring the spring have been composed by famous Chinese poets. So it is no surprise that Longjing (Dragon Well) tea and Hupao (Tiger Running) fountain bring out the best in each other and are acknowledged as the "two wonders of the West Lake".

Hupao Spring is at the foot of Daci (Great Compassion) Hill, five kilometers away from Hangzhou city, which stretches between the West Lake and the Qiantang River.

A Buddhist monastery was built near Hupao Spring. Now, Hupao Spring, the temple and the surrounding twisting valley have been turned into the Tiger Running Spring Forest Park. On the site is Li Shutong's Memorial erected in honor of the bel-esprit, who was outstanding in the fields of music, drama, painting, and calligraphy, and entered Buddhism in the Daci Temple in 1981.

According to local legend, there used to be a temple occupied by a monk named Xingkong during the Tang Dynasty (618-907). Later, due to lack of water, the monk planned to leave the temple. One night, he had a dream in which an immortal told him two tigers would move a fountain here. As expected, the next day two mighty tigers from the Hengshan Mountain circled the spot and dug a hole which caused the spring to gush forth -- hence, the name Hupao Spring (Tiger Running Spring).

In reality, Hupao Spring is formed by underground water that seeps through the veins and cracks in the quartz sandstone that is impervious to acidic materials. Due to its low mineral content the pure, sweet, cold spring water is an ideal health drink. Also, the spring water is known for its high surface tension. When a coin is placing in a bowl filled to the brim, the water will rise three millimeters above the bowl's edge without overflowing.

Since ancient times, Hupao Spring water and Dragon Well tea, which bring out the best in each other, have been known as the two wonders of the West Lake. Recently, when surveyed about the top ten scenic tourist attractions in Hangzhou, locals chose Hupao Spring for its great fame.

 Longjing Tea
Longjing Tea, which consists of flat, slender strips of tealeaves in bright green liquid, is most famous for its unique fragrance and flavor. Furthermore, Longjing tea is good for your health regardless of age. It is used to deter food poisoning, refresh the body, stop cavities, fight viruses, control high blood pressure, lower the blood sugar level and to prevent cancer. Hence, Longjing tea is regarded as the elixir of health and is widely sold and accepted all over the world.

The name Longjing comes from a small village on the Fenghuang Hill, in Hangzhou, Zhengjiang Province. It is said that residents in ancient times believed that a dragon dwelled there and controlled the rainfall. As a result, from as early as the Three Kingdoms Period (221-280), people from surrounding areas have traveled there whenever there was a drought to pray for rainfall.

Longjing tea is grown in the Longjing mountain area of Hangzhou, southwest of the West Lake. The fertile land is rich in both phosphorus and sub-acidic sand. This region prevents the cold currents from the north and holds back the warm currents from the south, thus the cultivation area of Longjing tea can be coated by cloud and mist for long periods of time. With such favorable growing conditions, Longjing tea is considered the best tea in China

The tea has a long history spanning more than 1000 years. The earliest record of its existence can be found in the book named Chajing (Classics of Tea), the first book on tea in the world, written by Tang Dynasty (618-907) tea-expert Lu Yu. However, Longjing tea was not given its current name until the Southern Song Dynasty (1127-1279). Hangzhou, as the then capital of the country, carried out further development in tea production. Knowledge of the tea began to spread and it was known all over the country by the Yuan (1271-1368) and Ming (1368-1644) dynasties.

In the Qing Dynasty (1644-1911), particularly, the fame of Longjing tea became widespread throughout the country. One of the most remarkable emperors of the Qing Dynasty, Qianlong, paid four visits to the place where Longjing tea is grown, not only to enjoy sipping the tea, and to write and sing poems to praise the tea, but also to watch the process of picking and roasting it. He was so interested in Longjing tea that he named the eighteen tea trees in front of the Hugong Temple "royal tea". From that time forward, the tea became increasingly popular in China.

By the early 20th century, Longjing tea was witnessing the highest popularity in its history. Since the founding of the People's Republic of China in 1949, the Chinese government has made great efforts to promote it and introduce advanced technology in planting, picking and roasting the tea. Subsequently, a quality-standards system for tea grading was set up. All these innovations contributed to the standardization of production of the tea.

According to local customs, the right time for picking the tealeaves is very short. The period between Qing Ming and Grain Rain (from April 5 to 21) each year is generally considered the prime time to get the highest quality Longjing tea. The recommended brewing method is to put a pinch of dry, roasted tea leaves into a porcelain or transparent glass cup and pour hot water at about 85 degrees Celsius into the cup. Sip and enjoy!
