Qishan County lives in the east part of Baoji, it was famous for high-quality wheat, and the most famous food is Qishan noodles with mashed meat.
There has a story about the origin of noodles with mashed meat. Long ago, a young guy who lived in Qishan county, married a good girl. The girl was not only beautiful and clever, but also hard-working and intelligent. On the next day after their wedding, the new wife cooked noodles for the whole family. Every one thought the noodles were very delicious. One day, her brother-in-law upgraded into officer, he invited his classmates to his family, then she cooked noodles to entertain them. Everybody was surprised at her delicious noodles. From then on, they called this noodles as "saozi noodles" which means sister-in-law' s noodles. In Chinese, noodles with mashed meat have the same pronunciation with saozi noodles. So people began to use this name instead of sister-in-law's noodles.
How to make mashed meat:
Cut pork into small pieces, and then put into a oil pan, fry for a moment and then add ginger in order to get rid of fishy-smelling. Then put soy sauce and a little amount a sugar in, cook for a moment and then put bean curd pieces, carrot pieces, and agarics into the pan. Cook for a while and then take them out.

How to cook:
Cut tofu into small pieces, cut carrots into small pieces, cut garlic sprout into small pieces and cut agaric into small pieces.

Put suitable amount of fried potato, carrot, tofo, agaric and egg into the prepared soup. Cook it until it was boiling, and then add garlic sprout in.
Take the noodles out and put into bowl, and then add soup in, after that, the famous Qishan noodles has been prepared.
